Ingredients:

2 cups basmathi rice
2 teaspoons ghee
1/2 cup fresh peas or french beans.
1/2 cup diced carrots.
3 sliced green chillies.
1/4 inch ginger.
1/4 teaspoon caraway seeds.
3 cloves
3 cardamom
2 sticks of cinnamon
3 to 4 strands of saffron soaked in warm water.

3 1/2 cups boiling water.salt to taste

Procedure:

Wash and soak basmathi rice in water for about 25-30 minutes.

1Heat ghee in a pan ,add caraway seeds,cloves,cinnamon,bay leaf and cardamoms.
Add  green chillies,chopped ginger and vegetables saute for a 2 minutes,add salt ,mix well.
Remove them to a plate.

2.Add ghee in the same pan,add drained rice and saute for few minutes.
3.Add enough boiling water(3 1/2 cups boiling water)
,cook on high flame until rice is 3/4 done.
4.Reduce the flame to very low temperature.
5.Spread saffron water on rice,layer with vegetables.
  Cover it and cook for 5 minutes.
Vegetable biryani -(no garlic and onion)
Serve hot.
