Amla pickle/Indian gooseberry pickle

Tasty,healthy and seasonal amla fruit pickle,south Indian amla pickle or usirikaya pachadi.

Ingredients: 

250 grams-Indian gooseberries(amla)
3 tablespoons-Chilly powder.
1 teaspoons-Turmeric powder
Salt-3teaspoons.
Fenugreek powder-2 teaspoon
Mustard powder -1 teaspoon.
Oil for cooking 1/2 cup

Preparation:

Wash amla and wipe all the water with a dry cloth.
Prick amla with sharp pointed knife ,rub 1 teaspoon of salt to amla's and leave a side for  1 hour.

Heat oil in thick bottomed pan,add amla,1 teaspoon of salt,1/2 teaspoon of turmeric powder and cover it ,cook on very low flame till amla are soft or amla starts opening.Do not over cook.Remove from flame and allow it cool completely.

Make tempering with mustard seeds,cumin,dry red chillies,curry leaves and astoefitida,allow it to cool.

Combine mustard powder,chilly powder,fenugreek powder,1/2 teaspoon of turmeric powder,1 teaspoon of salt and mix well, add this to tempering.
Add cooked amla to this and toss well.
Bottle this pickle in sterilised glass or ceramic jar.

Tastes well after two or three days.
Pickle can be stored up to 1 month and more if refrigerated.
