Ingredients:
  1. Basmati Rice -2 cups
  2. Potatoes -1cup cut in small cubes.
  3. mint/pudina leaves -2 table spoons
  4. green chillies -3 sliced
  5. onion-1 sliced
  6. curry leaves -10 to 15 leaves
  7. coriander leaves chopped- 2 teaspoons
  8. ginger-garlic paste-1/2 table spoon
  9. caramelised onions -1 table spoons
  10. Ghee-1/2 table spoon
  11. Oil-1 table spoon

Spices: 

  1. Cinnamon -2 sticks
  2. Black cardamom -2
  3. Cardamom green-3
  4. Shajeerza-1/2 teaspoon
  5. salt -1/2 table spoon(or as per taste)
  6. cloves-3 to 4
  7. coriander powder-1/2 table spoon
  8. Javitri-1
  9. Bay leaf-1

Procedure :

Potato bagara rice/Hyderabadi Aloo bagara rice

  1. Wash and soak Basmati rice,mean while cut all the vegetables.heat oil in a pan ,add oil and ghee,add spices,onions ,green chillies,let the onions turn brown,add mint leaves, curry leaves,ginger garlic paste,potatoes,coriander powder and salt.Allow the potatoes to change colour.Now add four and half cups of water(we can adjust water depending on the production date of rice,newly produced requires less water)
  2. Let the water come to boil.
  3. Now add rice,leave it in high heat till rice absorbs water,then on low flame cook for 5 more minutes, covering with  lid.
  4. check if steams comes out from lid.
  5. Aloo bagara is done,add caramelised onions and coriander before serving with any gravy curries.like Hyderabadi chicken koorma .Paneer masala.
